Has anyone developed a good system for maintaining privacy with patient
records on the cloud or on laptops that may be stolen?
Do you use a coding system rather than names, and if so, how does that
work for you?
Any other suggestions for ensuring non-identification?

I have a coding system of patients initials and case number . I keep an old fashion card index with name and that number!!! We are obliged to keep records for 7 years or up to the age of 18 with a child as far as I am aware so I have a purge now and again!!
