Can someone remind me what organ systems either of these waking times
relate to?

I'm also curious how reliable and useful people find these waking
times to be? I'm working on someone who says "I keep waking at 3:00
a.m)--and unfortunately the remedy I've been *strongly* leaning toward
is not under 3:00, but is italics under 4:00. I'm thinking not to let
that in itself turn me away from it, but--anyone have thoughts?

In Chinese Medicine it is Liver 1am-3am and Lung 3am-5am.

So tell me, what does a person learn from the hour of waking? Is it that the organ in question has a problem or the organ works more at that hour of the night? When you arrive at these conclusions what next?

The former, is what I had been told--that the organ has an issue.

I have a question - what does daylight saving time do to these time rubrics/affinities? the difference between 3 and 4 can be the difference from summer to winter in the actual time of day or night. I am thinking about this with a client and wonder if someone else has thought it through? Or has some experience with the answer.
