Is there a good website to learn about fermenting your own foods. I love coconut kefir but it is so expensive and I think my daughter has leaky gut now so I need to find fermented foods she will eat.

I started writing this yesterday and forgot to send it. Ugh...
There are a zillion websites dealing with fermentation. I recommend ONLY 1) wildfermentation.com (Sandor Katz, the fermenting guru) will teach you how to ferment food but he doesn't give you too much information on the site about the history of fermentation and how important it can be to your health. You can also buy his books... and they are definitely the best investment you can make.

You CAN read more than you can handle after googling Dom's site. He has everything there and it's trustworthy information.

Only one more... simplified and helpful to newbies: culturesforhealth.com They help a lot and have a LIVE CHAT feature. I've had to stop on a recipe many times and use their online chat feature. They aren't Sandor or Dom, but they're great for the basics.

Start with beet kavass, a powerful Russian drink FULL of probiotics, minerals and vitamins that are much more helpful to your body that juicing or raw beet salad.

To get the food and diet right, you will benefit immensely from joining the Weston A. Price Foundation and then purchasing Sally Fallon's book Nourishing Traditions. She has the basic fermenting recipes and the WAPF has a website chock full of informaiton on healing foods... it's international too so chapter leaders everywhere. It's their system for educating people and the one organization that I am aware of that gives you much more access to great information than you pay for to join annually.

The other thing I suggest is to go to their website and search for the list of Chapter Leaders. WAPF is so generous with information... and they speak from highly credible research done by Dr. Price, a dentist who did the research on traditional diet.

Your chapter leader will help you learn where to source bones for bone broth and help you learn how to make it. I believe health starts from there!

I also recommend chriskresser.com for Paleo ... and he is a great functional medicine guy and gives away a ton of good information for free.

My local organic farm makes and sells water kefir so maybe you can look online for a recipe for this.

You have to get the grains before you can brew milk or water kefir. You can purchase them from culturesforhealth.com . They're a bit pricey but will last forever if you know how to take care of them.

CFH also has stores that sell their products around the world. They have a store locator on the site. They also have recipes, videos, and "how to do pdf files" and the live chat where you can ask specific questions. They guarantee their grains, but culturing coconut water is a different story. I'm still trying to figure out how to do it without destroying the grains. Better, if anyone here knows "the science" of culturing I have some known strains, but no way to produce the powder and culture coconut milk or water with it. :-) So I gave up! Water kefir is good... especially when you do a second ferment. They are all full of probiotics that help heal the gut.

Tonics and recipes for beet kavass are in the "Nourishing Traditions" cookbook and the recipe should be @ wildfermentation.com . I always have 2 quarts of beet kavass in my refrigerator and it has done more than you can imagine for my health. You do NOT need grains to brew beet kavas or culture vegetables. You need salt or whey, which you can drain off from organic commercial yogurt. I use coarse grain Himalayan salt that contains 84 minerals, which I think is a good reason to use salt.

If you want to join this Yahoo group you may find someone in your area who has an abundance of grains and will share. I'm looking for new ones now, but will get the CFH grains if nobody responds to my request.

That would depend more on time than money. The former is in very short supply right now.
