Rochelle, it sounds as if the kale sold in Safeway is old, ergo tougher than usual, although chewiness is part of kale's "charm." My advice would be to remove the center rib, then chop the rest, and steam it lightly. Having lived in Japan, I often steam mine in a bit of shoyu (soy sauce) and rice wine vinegar. It can also be sauteed with chopped garlic in olive oil. Best not to overcook.

By the way, almonds are also an excellent source of calcium -- far better than dairy, because they don't leach calcium from the bones the way meat and dairy do in the course of metabolization.

Not to belabor a strictly speaking non-homeopathic topic -- but no one has
mentioned the issue of bioavailability of said calcium. Generally speaking,
calcium from vegetables is not especially useful by the body (also true of
calcium carbonate, by the way, as a nutritional element -- might be
interesting to think about in relation to the remedy.. Rosemary Hyde

But you can also be too alkaline; what's needed is *balance*, and foods that
help achieve/maintain that balance *for the individual*. Being too alkaline
is associated with degenerative states, extreme weakness, and also
interferes with nutrient absorption, as well as "everything else"...

well, as all of us who garden know all too well, ph balance in the soil is so critical. too acid, or too basic--well things just dont grow well and we see anything from non-growth to various aberrations and weakness of plants, as well as food losing flavor. as above, so below! we need to tend our bodies as we do our gardens. the issue is same. balance, balance, balance and replenish and nourish with high quality nutrients.

Rosemary,

If that were the case surely the majoirty of the planet's
population would never have sufficient calcium... the other side
of course in the affluent parts of the globe the 'excess' of
calcium in the diet is more likely to be causing these bone
problems, kidney stones etc. etc.

As with most things ... all things in moderation is the rule to
run by for less running probs.

You can buy litmus paper to check acidity. I have some (don't remember why)
that measures the pH in two-tenths unit increments, from 5.5 (acid) to 8.0
(alkaline). I know it's used for testing urine and saliva, but don't know
what the "proper" pH is for either.

I've been told (anyone agree/disagree?) that saliva ought to be "slightly"
alkaline, as this preserves the teeth best, and is best environment for
salivary enzymes; whereas urine ought to be "slightly" acid, as this does
best job of keeping minerals in solution, avoiding kidney stones etc. I'm
told it's common for folks to be reversed in this, but haven't ever been
told what you're supposed to do about it!

Hi Shannon,

The information I have is that normal value is 6.4 when the saliva pH is
tested between meals in a resting state. The normal after you have just
finished eating is 7.2.
urine about 6.8 [although one other source I have puts it as being ideally
6.4] blood about 7.1-7.4
