If you want to potentise to 6 or 6x, why not do Allium Cepa?
There is a good chance the students may actually get to use it one day and it gives you the chance to explain the kind of detailed indications required for a homeopathic prescription.
I did this with a class 10 years ago and one student at least still uses that Allium Cepa.

I am teaching genetics and botany this summer. One of the last topics I
cover in botany is phytochemistry. This is also my humble way of
introducing young adults to "alternative" medicine such as herbal and
homeopathic.
