I haven't kept up with this topic so please forgive me if I missed something or if this has already been mentioned.

Yes, we do! The Weston A. Price Foundation has lots of great research on this topic. My apologies I didn't make time to find more info but here is one article about grass fed vs. grain fed beef tallow nutrition composition:

It's great we have so many good resources and knowledgeable people on this list. There are also some fantastic Weston A. Price / Nourishing Traditions (by Sally Fallon) Yahoo Groups, great for this topic and the fish oil topic. I particularly like "newwaphb" and "discussingnt".
