Hi Irene,
I wonder whether there's been any specific testing to see whether
sprouting or fermenting eliminate that problem (skewing the immune
system)? It makes such a very big change in the way that soy digests
and "feels", I'd be surprised if it doesn't help from that standpoint
too--e.g. beans sprouted before cooking; miso?

there is a woman who runs an online site called body ecology.
one of her main dietary tenets is fermented foods. she believes
that we need to eat fermented foods ever day. there are recipes
for fermenting vegetables and she sells kefir starter, etc. i say
this only to note the importance of fermenting in health according
to some. of course there are others who think fermentation is a
big no-no, particularly the candida people. and fermentation
seems to have always been a method of food preservation.
