Shannon,

I think salmonella is associated with factory-farmed chickens. As one who
raises chickens (organic, free-range), I know they're healthy, I check the
shells of their eggs, and I wouldn't hesitate to use raw eggs from a clean
nest.

I recently learned that if you don't wash those eggs, there is a natural
protection on
the shells which helps preserve them. That is why people could leave a
basket of eggs
on a table without refrigeration in years before we had that
technology. I actually
was able to buy some eggs unwashed if I got to the farm at collection
time. They are
supposed to be the healthiest this way.

An oily layer yes - helps keep the air out.
BUT - the salmonella issue is nothing to do with the outside of the eggs.
It started when hens were bred who had ovarian cysts - and the salmonella from the cysts can get into the INSIDE of the eggs as the eggs are first formed, long before they are laid.
You can rub vaseline on the eggs to go back to an airtight egg out of the fridge.

I would much prefer using coconut oil instead of a petroleum based
product like vasoline

I know a chef who used to work on yachts: she'd buy only unwashed eggs, for
those were the only kind that would reliably keep at sea.

I do eat coconut oil.. That is my cooking oil so there is no problem if
it were used to coat eggs.
I would never use vasoline ever.

I fortunately live in a rural area with an organic farm less than 2
miles down the road.
It is possible for me to get unwashed eggs if I time by getting there
correctly. I also
remember when NYC had small farms that delivered milk and eggs. Gone are
those
days and city folk are lucky now to have farmers' markets weekly during
growing season.
