Thanks for the tip on skinning the feet, Maria. I have a couple pounds of organic chicken feet, which I understand make superior broth.
I'd also like to suggest adding a little vinegar at the start of cooking to help dissolve the calcium in the bones.

Sherri, I have a crowfoot soup recipient give certain clients who have bone or cartilage issues. In this case I know the remedies can help, but by giving the nutrients needed for repair the bone replacement goes much faster.
I think we all need to give our clients healing strategies. Hahnemann did.

I cook my bone stocks for three or sometimes more days.

I do use vinegar, but think it imparts a funny flavor to the stock. I cook the stock in stages. Day one it is the meats and veggies this I simmer until cooked and remove, add more water for day two and more veggies and this day is for the gelatin and the vegies again until cooked. I strain this and add more water and the vinegar. Cook this all day always adding more water when it boiled down or when I use it ( which is all the time while it is cooking. ). This batch makes a beautiful almost fluffy three layered liquid containing the dissolved bone.

Depends what you are trying to extract. I have had chicken bones so soft you can pulverize the long bones with your fingers.
I strain off the liquid in the end and feed what is left of the solids to my dogs. They love it.

I would have cooked those bones for three days, 8 hours is not nearly enough time.
